No need to be intimidated by the large number of woks you see for sale. If you are looking to buy a wok, I’ll help you step through the choices and have you ready to make the best choice for you.
What Kind Of Wok Should I Buy?
Not everyone is going to want or need the same kind of wok. There are a wide variety of models out there. Your choices range across a wide spectrum including metal type, shape, handles, and if you want an electric or traditional wok. We’ll take a look at each of these options.
Electric vs. Traditional Woks
Traditional Asian woks are the most popular and provide you with the greatest number of options. These are not right for everyone. Some people will prefer the ease of the electric wok, simply being able to plug it in and have it on high searing heat in seconds.
Electric woks are also good for people that have electric ranges and worry that a tradition wok just won’t work as well, or they prefer a traditional round bottom which can’t be used on an electric range. Two of the best electric woks are the Breville BEW600XL and the EW30XL Gourmet wok.
Metal Type
Carbon steel is the most popular type of traditional wok. It conducts and holds heat very well and evenly. As I’ve said before – you need high heat for a good stir-fry. There are also several other types of woks available including steel, aluminum, and stainless steel. Each one of these has their advantages and disadvantages. . If you are going the traditional route, a carbon steel wok is the way to go.
Round Bottom vs. Flat Bottom
A round bottom wok is the most traditional and also best. However these are only appropriate for people with gas ranges. If you have an electric range you are going to want a flat bottom wok. It will be able to get a more even and consistent heating. You might want to look at an electric wok with a round bottom instead. The choice is yours. Flat bottom woks can also be used on your gas stove.
Non-Stick Surface
There are a large number of woks available today with non-stick surfaces. If you are going the traditional route with a carbon steel wok I would stay away from the non-stick surface and just properly season your wok. If you are going the electric wok route, non-stick is pretty common and a good way to go. It makes clean up easier, and allows you to cook with less oil for a healthier meal.
What type of Handles?
Traditional woks have two small handles on the side that make for easy lifting. These don’t really work too well for a traditional range. I’d stay away from these models and look for ones with a long wooden handle. I prefer the wooden vs. metal handle because they don’t get as hot and give your hand a little protection from the heat.
